An elegant, aromatic plant that loves the sun, calcareous soil, and well-drained ground. Its silvery-grey, fine foliage is not only beautiful to behold but also very fragrant and flavorful. The young leaves and shoots are real flavor enhancers in salads, pasta dishes, or homemade pesto.
The Santolina is also medically valued for its anti-inflammatory properties.
Like lavender, this plant benefits from regular pruning to prevent it from becoming too woody. Therefore, prune it back regularly to about 30 cm to keep it fresh and compact. The maximum height is about 50 cm.
In summer, decorative, yellow spherical flowers appear, while the grey-green foliage remains beautiful for a long time, even in winter.
