This attractive sorrel grows in the dampest spots or in ponds. Its leaves are quite large (as one would expect with always sufficient water) and the young leaves are tender for consumption. The plant can reach a height of 30-150 cm (depending on the location), which includes the beautiful green or red flower plumes. Make a delicious stew or sorrel porridge (old dishes) from the young leaves. Sorrel aids digestion and also has many medicinal applications. For many recipes, google “sorrel recipes”.

Source: www.mijnreceptenboek.nl Sorrel is prepared in the same way as spinach. The taste of sorrel is also somewhat reminiscent of spinach. It is an important ingredient in the dish "eel in green sauce". The taste of sorrel fits perfectly in soups, sauces and omelettes. Chop the sorrel finely and add it to the dish. You can use sorrel as an extra addition in salads or mixed salads. It will give them a fresh and sour accent. Sorrel can also be (briefly) stewed. Use a stainless steel pan and a little butter. Freshly chopped sorrel can be used as a herb bouquet for various dishes. Chop the leaves very finely and use only a small amount. In a salad, vinegar can then be omitted. Do not use sorrel in combination with mineral water. Sorrel can, however, be well added to a fatty meal. The meal will be better digested as a result.
