A truly European rice! Around the tenth century, rice came to Italy and began its rise in Sicily. About 500 years later, cultivation began in the north, and risotto dishes really took off there. Vialone rice is slightly sticky, fairly round rice. It is therefore an excellent variety to make a nice creamy (yet firm) risotto. Cultivation in Italy takes place in very humid areas, where meltwater from the Alps makes the soil soaking wet. So, in your garden, create a small dike around the growing bed and provide plenty of water if Mother Nature isn't already watering heavily.
