Although mainly known as a fiber crop, jute is the most important leafy vegetable, especially in Egypt and Sudan. Almost everywhere in the tropics, the young vitamin-, calcium- and iron-rich jute leaves are eaten. The mild, soft leaves deliciously thicken your soup or are a tasty addition to salads. You can dry the excess leaves for a winter stew.
