The roots of this very old cultivated crop are eaten like salsify and taste like asparagus and oyster. Roasted, they provided so-called coffee substitute in times of scarcity (as did parsnips). The blue-purple composite flowers on the 1-meter high plant open only in the morning during warm, sunny weather (photo www.genster.nl by René Vonk). Sowing: March-May, harvestable: October-February, frost-resistant. 2 grams is sufficient for 1.5 m2.
