It was bound to happen: the first beautiful purple snow peas are here! The color is caused by Anthocyanin, an antioxidant, which gives blue grapes their purple color (the pod is named after the 'Shiraz' grape) and the autumn colors of leaves. Red cabbage, eggplants, blackberries, grapes, and cherries also contain this natural, healthy coloring, known as E163.
It took over 10 years to achieve this beautiful result! Of course, the color is best preserved raw; after a quick stir-fry, the color remains fairly well. After cooking, the pods turn dark green, a fascinating process to follow, which is also great fun for children: "magic pods"!
An undeniable bonus is the beautiful bloom: light lilac with blood red, ideal for an ornamental vegetable garden. The plants grow 90-150 cm high, depending on moisture and soil fertility. Tip: sow this legume alternately with false flax (390900) for natural support.
