(Too) large harvest? Sauté a quantity of chopped zucchini, onions, and garlic. Then purée and freeze. After thawing, this, together with broth, forms a good base for soups. If the zucchini is a bit too large: Peel and deseed, then shave completely with a vegetable peeler or cheese slicer, creating zucchini ribbons, beautiful white strands. Sprinkle with salt and let drain. Afterwards, mix well with two generous tablespoons of chopped chives, the same amount of burnet leaves, and the same amount of mayonnaise. This makes a delicious salad for approximately 4 to 8 people, depending on the size of the zucchini. Per 15 cm length of zucchini and a circumference of 25 cm, this is enough for 1 to 2 people, depending on whether it's a main course or a side dish...
