From this flavour enhancer, you harvest the tender, slightly spicy leaves. Ideal as a flavour enhancer for mixed salads. You can pick them at any stage: very young (as a micro-green) or up to 15 cm in length. Keep the growing tip alive, the plant easily regrows, re-sowing is also possible, you can harvest almost all winter long, the plants are remarkably frost-resistant. Tip: also delicious as a mash!

The chicory family includes endive, frizzy endive and various types of chicory. Characteristic is the more or less present "bitterness", formerly detested and now highly valued. Let a plant "bolt" once: chicory flowers are usually beautifully blue and smell of vanilla!
