This low-growing creeping plant is calciphilous and even thrives in biting, salty sea wind. The pink labiate flowers protrude stubbornly from the brown flower heads and are very popular with butterflies and bees. The almost round to elongated leaves are delicious in salads or soups and have been popular since ancient times! All parts of the plant are edible; washing the leaves thoroughly helps remove the slightly bitter tannins. An olive-green dye is extracted from the flowers and stems. Finally, the medicinal applications: these are so numerous that you can experiment with them (at your own risk); just look it up on the internet or in herbology books…
