Broccoli report

  • Product number: 060100
  • Origin: North America, Eastern Woodlands
  • Latin: Chenopodium berlandieri

For lovers of Orache or Quinoa, this is a welcome addition. This crop has been cultivated for centuries, even by ancient peoples throughout America, but originated in the Eastern Woodlands of North America. It is a wonderful summer alternative to spinach, the warmer the better! Briefly stir-frying is recommended; after 30-50 seconds, the toxic substances will have disappeared (just like with green beans, for example). Unripe, green flower buds can be eaten like broccoli, stir-fried or deep-fried in batter. The seeds (gluten-free!) are cooked or ground into flour. Young leaves (green with red hues) or newly germinated seeds are deliciously tender and can be mixed into salads (provided not in excessive amounts). The high calcium and vitamin A content make this ancient vegetable very healthy!
