The well-known Marsh Marigold has become a common sight in shallow ditches, wet grasslands and along streams. Give it a (very) moist spot and this perennial plant will reward you with beautiful, glossy, kidney-shaped leaves and warm yellow, glossy flowers. The plant reaches a height of about 30 cm and spreads wide.
Much of the plant is edible, sometimes raw, sometimes cooked. The roots must be cooked first; young leaves (in salad) and flower buds can be eaten raw (pickled like capers), and older leaves can be cooked like spinach.
Please note, some people experience skin irritation from this plant!
For its many medicinal properties, consult reliable sources on the internet; use at your own risk.
